Pumpkin curry with Lentils and Chickpeas

I love this Curry, its full of Indian spices like Gram Marsala, Tumeric, Ginger, garlic and chili. If you can’t find fresh pumpkin where you live you can omit it and it will still be delicious. The coconut milk adds a nice creamy consistency to the lentils and chickpeas. This is a vegetarian recipe that is hearty and filling and gluten and dairy free too! You can stock up your pantry with these dry ingredients and be ready to make this dish even if you are in desperate need of going to the grocery store. Best of all it’s ready in under 30 minutes, so get your rice started and you will be sitting at the table in front of a steaming bowl of curry in no time.

We recently had a picnic in Italy with a group of friends and I made this dish with a big pot of rice and it was a hit with everyone, especially the vegetarians and those that have a dairy free diet. Give it a whirl and see what your family thinks. I especially love the toppings!

Pumpkin Chickpea Lentil Curry

  • 1 1/2 cup cubed pumpkin
  • 1 onion, diced
  • 1 Tablespoon oil
  • 1 teaspoon salt
  • 4 cloves garlic
  • 1 1 cm or 1/2 inch section ginger
  • 2 teaspoons curry powder
  • 2 teaspoons gram marsala 
  • 2 teaspoons turmeric
  • 1/4 teaspoon cayenne pepper
  • 2 cans chick pea
  • 1 cup lentil
  • 3 1/2 cups water
  • 1 can coconut milk
  • 2 Tablespoons sugar

Toppings:

  • 1/2 cup Cashews
  • Cilantro
  • Jalopinos or chili peppers

Instructions:

  • Sauté the cubed pumpkin and diced onion in a little oil. 
  • Add the minced garlic and ginger and continue to sauté until fragrant, add the dry spices and stir. 
  • Add the canned chickpeas, dry lentils and water, bring to a boil, reduce heat, cover and cook until the lentils are tender, about 15 minutes. 
  • Add the coconut milk and sugar, bring to a bubble and reduce heat. Serve immediately with the toppings of your choice.

The dry ingredients in this dish make it great for when you have nothing else ready to make for dinner! And it’s ready in under 30 minutes!

After cooking the mixture will be thick…
add your can of coconut milk and it will make it so creamy!
