Portabella Mushroom Pizza’s (Keto Approved)

Portabella Mushrooms Pizzas with pesto and mozzarella

This is a great quick and easy recipe for a Keto lunch or light dinner. High in fiber and flavorful with tasty pesto, it will cure your pizza cravings! You can also change it up with a red tomato sauce and typical pizza toppings like pepperoni, black olives, bell peppers or sun dried tomatoes!

Portabella Mushroom Pizza’s

Ingredients:

  • 2 Portabella Mushrooms
  • 1 Tablespoon olive oil
  • 2 Tablespoons Pesto
  • 1/2 cup Mozzerella Cheese, shredded

Instructions:

  • Remove the stem from the mushroom caps.
  • Saute mushroom cap, gill side down in olive oil until slightly golden, flip and sauté the bottom
  • Add 1 Tablespoon of pesto to inside of the mushroom
  • Top with shredded Mozzarella cheese
  • Place under the broiler of the oven until golden on top. (You can also keep it on the burner, lower the heat to low and cover with a lid until the cheese is melted in the top
