Keto Coconut Cocoa Butter Balls

The wifely support of a husband on the Keto diet continues this week as we surmount another family dinner full of tasty temptations. Having just arrived home from Italy I wanted to cook a true pasta dinner for my sister and her family. I chose to make Ragu and homemade pasta which is a pretty hard thing for a husband to pass up, especially my husband who has a particular soft spot for homemade pasta.

I came prepared with a dish of zucchini “zoodles” that I had cooked in butter and garlic. The idea was that my husband could still enjoy the Ragu and Parmesan Cheese on his tasty dish of zoodles. He wasn’t quite convinced and was feeling a little suspicious of the strange green tinted “noodles”. He has had a particular loathing to anything zucchini so he was really starting to panic. But we ladled the luscious ragu on his plate of zoodles and before long he was enjoying his keto pasta. Don’t forget this is a man who WANTS to be on the Keto diet and want to succeed but the zucchini almost killed his resolve. Later he told me it really wasn’t so bad.

The next hurdle was dessert. My mom had made her famous Three-layer Coconut Chocolate Bars (I will have to share that recipe with you in a future post) and no one can resist those. So I found this recipe that appeared to have the same basic ingredients: Chocolate and Coconut. So we brought him his own private stash of Keto Coconut Cocoa Butter Balls and he was as happy as a lark. Give these bad boys a try and keep your Keto menu diversified, it seems to be our secret to success!

Keto Coconut Cacao Butter Balls

Ingredients:

  • 1/2 cup cream cheese (4 ounces)
  • 1/2 cup butter
  • 1/2 cup keto approved sugar such as erythritol
  • 1/4 cup cocoa powder
  • 1 cup unsweetened shredded (or desiccated) coconut
  • 1/3 cup chopped walnuts

Instructions:

  • If your “sugar” is larger size grains, you may want to grind it a little with a mortar and pestle to make it fine.
  • Blend all ingredients together, I used an electric mixer, it was a little stiff so I finished with mixing it with my hands. Any excuse to get my hands in the cookie dough!
  • Form bite size balls then roll them in the coconut.
  • Store in the freezer
