To tell you a little about us, my husband and I lived in Italy for 4 years before moving to Payson, Arizona. I have always loved cooking and tried to learn the authentic Italian style of cooking from the locals. It’s different than how we view Italian food in America and I try to teach this authentic Italian style in my classes. I have many funny stories to share with you about my cooking “faux pas” as I learned Italian cooking from Italians!
I started my Online Cooking Classes while still living in Italy during the Pandemic and I have now taught hundreds of classes! It has been my pleasure to teach many Anniversary Parties, Business “team-building” parties and even a wedding shower! But most of my classes are friends and families who enjoy socializing together while learning to make traditional Italian food!
We are happy to share with you the traditional ways of making pasta, risotto, dolce and secondi (meat course). I personally am an American Italian who has been making ravioli for over 35 years and my Italian family have been making ravioli for five generations!

- Spinach Ricotta Ravioli with Marinara
- Pumpkin Ravioli with Butter Sage
- Pumpkin or Shrimp Risotto & Tiramisu (a 2 for 1 class!)
- Spanish Seafood Paella
- Gnocchi with Various Sauces ( all in the class may choose one: Gnocchi alla Sorrentino, Gnocchi with Gorgonzola and Walnuts, Creamy Sage, Pesto)
- Lasagna Bolognese
- Ragu & Taglietteli
- Pizza & Tiramisu (another 2 for 1 and great for a party with friends, teens & kids!)
- Cannoli (Sicilian “dolce”, dessert with a fried shell and sweetened ricotta with candied oranges and chocolate)
- Pasta Carbonara & Saltimbocca (in this class we make a “primi” (first course of pasta) and a “secondo” (second course, meat dish). These are the traditional Roman dishes of creamy Carbonara and savory sage infused Saltimbocca)
- Chicken Cacciatore with Oven roasted potatoes (Cacciatore means “hunter” this is a whole chicken cooked in true Tuscan style with Rosemary, wine, olives and garlic.
- Eggplant Parmesan
I also offer international cooking classes, some of my favorites are:
- Mexican Chili Rellenos (cheese stuffed Pablano Peppers with Tomatillo Sauce)
- Middle Eastern Falafels (chickpea fried balls with Tzatziki Sauce & Humus)
- Thai Panang Curry with Jasmin Rice and Springs Rolls with Peanut Sauce
- Indian Butter Chicken with Jasmine Rice, Saag and Green Chutney
- American Pies (choice of lemon meringue or coconut cream and Apple, 2 pies)
- Japanese Sushi

- Classes generally last from 1-2 hours
- Most classes have no special equipment
- You will be doing the cooking yourself, in a “hands on” class, able to interact with me, the teacher! Individualized help and instructions are provided
- I will provide a list of ingredients and instructions by email prior to the class
