Homemade Cherry Pie from Fresh Cherries

Wow! It’s a bumper crop this year, what to do with ALL those cherries? How about Homemade Cherry Pie? It’s fun and relaxing to have a Cherry Pitting Party, just sit around outside in that beautiful May Day pitting and laughing with friends and family.

There is something we lose as a society by not getting down and dirty with our food! It shouldn’t all be about convenience and speed. Why spend hours isolated on an electronic device when you can unplug and talk, really talk, over a big bowl of cherries! Like a friend of mine said today ” it’s like the quilting days, when women got together and talked over quilting”. No special equipment needed, just your fingers, a good friend and some bowls.

 Homemade Cherry Pie from Fresh Cherries

4 cups pitted cherries

1 and 1/3 cups granulated sugar

1/3 cup flour

1/2 teaspoon salt

4 Tablespoons cold butter

Prepared Pie Crust (see my previous post)

1 Tablespoon milk

1 Tablespoon granulated sugar

Mix sugar, flour and salt together until combined, pour over pitted cherries and stir until thoroughly mixed.

Roll out Pie dough, place over Pie dish, pour cherries into dough. Chop butter up into four slices and add on top of Cherry mixture. Roll out second dough ball, place on top and pinch edges, tucking top layer of dough under bottom layer and pinch. Or you can trim the dough around the edge of the dish and pinch with a fork, spritze with milk, brushing your hand over the top of the milk spritzed dough until a light layer of milk in cover it. Sprinkle with sugar. You may want to protect the edges of the dough with a collar of tinfoil to prevent burning while the Pie bakes.

Bake at 400 for 20 minutes, reduce heat to 350 and continue baking for 30 more minutes. Pie should be golden brown. Remove tinfoil collar to allow the edges to brown.
