Huevos Rancheros

(Mexican Fried Eggs with Red Sauce, Corn tortillas and cheese) Keto Adaptable!

I mentioned Huevos Rancheros in a previous post when I made Posole and I was describing all the wonderful things you could make with Enchilada sauce. I decided that I should write a post on how to make Huevos Rancheros since it is one of my favorite breakfast or brunch recipes.

When Jeff and I first started intermitten fasting it was difficult to wait the 16 hours until we could have breakfast! We often ate Huevos Rancheros around 11:00 am because it was a quick meal for hungry people to make, full of protein and delicious!

Give this recipe a try and you will want to eat them for breakfast, lunch and dinner! I like to use flour as a thickener even though it is not Keto because there is only 6 grams of carbs in a Tablespoon of flour and this recipe is for two servings. So each serving is only 3 grams of carbs. However, if you want to remain strictly Keto, you can use Xanthan Gum, which we used in the photos on this post. I don’t like the gelatinous consistency of Xanthan gum but my husband doesn’t mind it at all. So it’s your choice!

This recipe is great whether you are on Keto, trying intermittent fasting or just a regular person loving good food! Of course for the Keto recipe you would omit the corn tortilla but add sour cream, avocado and bacon and you won’t miss the tortilla at all!

Huevos Rancheros 

(for two people)

Ingredients:

2 eggs

4 corn tortillas (omit for Keto)

Cheese for shredding such as Monterey Jack, Cheddar or Provolone

Red Sauce* :

  • 1 clove of garlic minced fine
  • 2 Tablespoons chili powder (all chili powder is different depending on the type of chili used. You can add more or use less depending on the flavor,)
  • 1 Tablespoon oil
  • 1 Tablespoon flour (or 1/2 teaspoon Xanthan Gum)
  • 1 cup Broth or water
  • a pinch of salt

*or use the recipe for red sauce found in my Posole recipe from an earlier post. That is the “official” way to make it. This recipe is for a quick and delicious easy fix.

Optional Toppings:

  • avocado
  • sour cream
  • green onions
  • bacon
  • cheddar or jack cheese, shredded

Instructions:

First make the sauce: add the oil and slightly sauté garlic over medium heat, then add the flour (or Xanthan Gum) and Chili spices. Stir with a whisk to combine and add the broth or water slowly, whisking as you go. Add the amount for the thickness you like. Set aside.

Grate your cheese and chop avocado or green onions if you are going to use them. Set aside.

Use a little oil in the skillet and gently fry the eggs. You can flip the eggs if you dare, I just cover the eggs with a lid so the yoke is not disturbed. I like my yoke runny so when I cut into the Huevos Rancheros the yoke comes spilling out. Yummy!

Dip the corn tortillas one by one into the red sauce. Assemble the Huevos Rancheros like this: corn tortillas, fried egg, another corn tortilla, top with more sauce then cheese, place under the broiler to melt the cheese or eat it like that. Top with avocado, sour cream and green onions if desired.
