Lynns Creamy Pesto Keto Chicken

This recipe I learned from my mother-in-law Lynn, she was the first to introduce us to the Keto Diet about a year ago. Back then I barely understood the concept, but she has persevered and lost a lot of weight on the Keto Diet. This past week we visited them and spent a week eating delicious Keto meals. From a Smoked Rib Dinner with all of the sides, to Beef Brisket, Jalapeño Poppers, Scallops, Hot Wings and much more. We never felt like we were dieting and still gathered around the table each night to nourish our tummies and hearts. It’s what family is all about, good conversation, good card games and enjoying time around the dinner table.

I came home with some delicious recipes and I’m happy to share this one with you, it’s a dinner in a casserole and is really complete in itself. I promise you that you will want to go back for seconds for this real comfort food, I hope you enjoy it gathered around the table with your family.

Lynn’s Creamy Pesto Keto Chicken

Ingredients:

  • 2 pounds chicken thighs (about 5-6)
  • salt and pepper
  • 2 Tablespoons butter
  • 1 cup heavy cream
  • 3 Tablespoons pesto
  • 1 head of cauliflower, chopped into small florets
  • 1 cup cherry tomatoes, quartered
  • 3 leeks, sliced thinnly
  • 2 cups shredded cheddar cheese

Instructions:

  • Lightly season the chicken thighs and brown on both sides in butter.
  • Meanwhile, mix the cream and pesto together and place the cooked chicken thighs in a casserole dish.
  • Cover the chicken thighs with the cream pesto mixture. Top with chopped cauliflower, leeks and quartered tomatoes.
  • Top with shredded cheddar cheese
  • Bake in a 350 degree oven for 25 minutes.
  • Serve with Spaghetti squash and a green vegetable.
