With Berry Sauce and Whipped Cream (Keto Adaptable Recipe)
Many of us in America have never heard of Pavlova, but it is almost the National Dessert of Australia and New Zealand. It has been hotly debated which country invented this dessert but we do know that it was concocted for the ballet dancer Anna Povlova during her tour of Australia and New Zealand. The dessert is a light base of meringue topped with fresh fruit and whipped cream. It is as ethereal as the dancer herself.
It makes a very “diet-friendly” desssert because there is no flour, just egg whites, sugar, berries and cream, for this reason it also makes a great Keto dessert.
I made this elegant dessert for my sister and her husbands anniversary party. Everyone was happily on the Keto Diet so I whipped up this fancy dessert in her honor.
I used corn starch in the recipe because I don’t like Xanthan Gum. Between the sauce and the meringue there is a total of 4 Tablesoons of corn starch this equals 28 grams of carbs. If you eat 1/10th of this dessert it is only 2.8 grams of carbs, well worth the delicious taste!
Pavlova with Berry Sauce and Whipped Cream
Ingredients for the meringue:
- 6 egg whites
- 1 cup of sugar (or Xylitol)
- 2 Tablespoons of corn starch
- 1/2 teaspoon cream of tarter
- 1 teaspoon vanilla
- pinch of salt
Instructions:
- Turn oven on to 300 degrees
- prepare a baking sheet with parchment paper or wax paper. Trace the shape and size of Pavlova you would like to make
- Combine the sugar with the corn starch
- Using an electric mixer, whip the egg whites until frothy
- add the sugar/cornstarch mixture spoonful by spoonful while you continue beating the whites
- add the cream of tarter, vanilla and salt
- continue beating until stiff peaks form and the meringue is glossy.
- Spoon the meringue on the wax paper and shape it into the form you would like, keeping a slight indentation in the center for the filling.
- bake for 50 minutes, turn the oven off and leave the Pavlova in the oven to continue to crisp up.
Ingredients for the whipped cream:
- 1 cup of heavy cream
- 3 Tablespoons of sugar (or Xylitol)
- 1 teaspoon vanilla
Instructions for the whipped cream:
Beat the cream, sugar and vanilla together until stiff peaks form, cover and keep in the refrigerator
Ingredients for the Berry Topping:
- 2 cups frozen berries
- 4 Tablespoons sugar or Xylitol
- 2 Tablespoons corn starch
Instructions:
- Place the berries in a medium sauce pan along with sugar and corn starch and bring to a boil, stir occasionally until thickened,
- Cover and place in the refrigerator
Assemble the Pavlova at the time of serving. Spoon the berry sauce on the top of the Pavlova and top with whipped cream.
