I made this dish during my teenage years, long before I knew how to make real Chili Rellenos (click on the link to get the Authentic Version). Since I learned the real ones, I have neglected this recipe and it fell into disuse, way in the back of of my mind with all of the dusty memories of old.
But this week, while my husband and his brother were busy smoking ribs, I was tasked with the challenge of making side dishes for a Smoked Pork Rib Dinner. The challenge was that we were all on the Keto Diet and Pork Rib Dinners are usually carb heavy with side dishes like Mac & Cheese, Corn Bread, Chili Beans, and Potato Salad.
So what’s a Keto Wife to make? We had already exhausted ourselves with the typical Cauliflower dishes, so I turned my attention to this old favorite of my youth, Chili Relleno Casserole. It’s a perfect BBQ side dish because it’s cheesy, has chili peppers, and well, it’s delicious. So on my Pork Ribs Menu we had Chili Relleno Casserole, Jalapeño Poppers, Festive Coleslaw and Green Beans with bacon. Let me tell you, with those Smokey Ribs and the “All-Star” sides, nobody missed the Carbs.
Ingredients:
4 eggs
1/2 cup of cream
1 4 ounce can diced chili’s
1/4 teaspoon cumin
1/4 teaspoon Black pepper
1/4 teaspoon Granulated garlic
1/4 teaspoon salt
1 cup shredded Cheddar or Jack cheese
Instructions:
- Beat eggs until smooth, add cream, chili’s, spices and cheese together, stir and pour into a casserole dish.
- Bale in 350 degree oven for 25 minutes.
