Ahhhh, the peak of the Summertime is late July, and nothing says Summer better than a homemade peach crisp slowly melting a dallop of vanilla ice cream that has been scooped on top. Peaches are one of my favorite fruits, from the fuzzy soft skin to the blush of red around the gnarled pit, I love this summer stone fruit!
My kitchen will soon be humming with bubbling pots of peach jam, jars of sweet canned peaches lining my pantry, Peach Bellini’s sparkling in the champagne flute and icy Peach Mojitos sweating in the summer heat. But the first fruits of peach season start with biting into a fuzzy warm peach right off the tree, not bothering to wash it because no pesticides have been sprayed in this backyard. As I bite into the soft fruit just picked from the tree, the juice drips down my arm all the way to my elbow and I know summer has hit its peak.
Old Fashioned Peach Crisp
4 cups peeled and sliced peaches
3/4 cup brown sugar
1/2 flour
1/2 cup rolled oats (oatmeal)
1 teaspoon cinnamon
1/3 cup soft butter
Peel and slice 4-5 peaches and place in a baking dish, mine was a square 9” x 9” clear glass baking dish.
Measure out the brown sugar, flour, cinnamon and oats in a large bowl. Slice or cube up 1/3 cup of butter, that’s almost a whole cube. I allow my butter to soften a little, if you are making this in the summer, which I am sure you are since that is peak peach season then set your bowl outside and it will soften up quickly! Inside that blue plastic cover are a treasure of tried and true old fashioned recipes passed down to me from my mother. I’m happy to share this one with you! Yes, it’s a variation of an apple crisp recipe so feel free to make it again this Autumn when it’s apple season!
Then using a pastry blender or a wisk, slowly mix and chop the butter into the dry mixture until it is all incorporated and resembles crumbs. Evenly dump on top of the peaches and bake in a 375 degree oven for 30-35 minutes. It will be bubbly and brown on top. Serve warm with vanilla ice cream.

Has your blue cookbook been too close to the fire and been burned, as mine has? The ink on my recipes is so faded it is almost not legible, but my girls won’t let me re write them!
