As you know from my last post, my fig tree is busting with fruit so in a attempt to keep up with its bounty I have been making this Savory Fig & Feta Tart. I serve it as the antipasta course alongside an Arugula salad. It is an elegant dish made with a pie crust or puff pastry as its base topped with fig jam and caramelized onions that are finished in balsamic vinegar. Then it is sprinkled with crumbled feta cheese and fresh sliced figs. It was beautiful and a big hit!
This Savory Fig Tart is the perfect combination of sweet and savory. The fig jam and carmelized onions providing the “sweet”, the feta providing the “salty” and the arugula salad providing the peppery, bitter flavor. Such an elegant and beautiful balance. If you have a fig tree or a friend that has one, give this recipe a try!
Fig & Feta Tart with Caramelized Onions
Ingredients:
- 1 Prepared pie crust (get my recipe here) purchased or puff pastry
- Fig Jam (get my recipe here) or purchased
- 3 onions
- 2 Tablespoons olive oil
- 1 Tablespoon Balsamic Vinegar
- dash of salt
- Approximately 6 fresh figs
- Approximately 1/3 cup crumbled feta cheese
- Fresh tyme (optional)
- Fresh Arugula (Rucola or Rocket lettuce)
Instruction:
- Line a pie plate or baking dish with the pie crust and poke holes in it with a fork
- preheat oven to 350 F
- Bake pie crust until it is lightly golden, about 10 minutes (skip the pre=baking step if you are using puff pastry)
- slice onions thinly
- Sauté onions in 1 Tablespoon of olive oil until lightly brown and carmelized.
- Finish sautéing with 1 Tablespoon of Balsamic.
- Spoon a layer of fig jam on the pie crust
- Top jam with crumbled feta
- Top feta with thinly sliced fresh figs
- Sprinkle with fresh Tyme (optional)
- bake again until heated through
- Toss arugula with 1 Tablespoon olive oil and a dash of salt
- Serve warm with a bed of arugula
