So no need to write anything about Keto Waffles except YUMM!! Today my husband and I came home at lunch time and decided to eat breakfast for lunch. I had been wanting to try Keto Waffles every since my mother in law told me how much she liked them.
My mother in law is known in our family for her delicious waffles (non Keto version). So I was anxious to try this Keto version out. Its mainly egg whites beaten until stiff peaks form and egg yolks, coconut flour and butter. Much like the much treasured “originals”
My husband got busy making the bacon, eggs and cappuccinos while I whipped up the waffles and blueberry sauce. When we sat down to eat after the flurry in the kitchen, my husband was diving into a lost world of waffles and syrup and barely let me take any pictures! But I got a few in before it was devoured. Let me tell you, this recipe is a keeper. So is he.
Keto Waffles with Blueberry Syrup
Waffle Ingredients:
- 5 eggs, separated
- 4 Tablespoons coconut flour
- 1 Tablespoon Xylitol or other Keto Sweetner
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1 cube of butter melted
Waffle Instructions:
- Get your waffle iron heated up.
- Place all egg whites in one bowl and egg yolks in another
- Add the vanilla to the egg whites, beat the egg whites with an electric mixer until stiff peaks form
- Melt the butter and allow it to cool slightly
- Mix the coconut flour, sweetener and baking powder together
- Beat the egg yolks, add the melted butter, pouring while you are beating the egg yolks.
- Add the flour mixture and continue beating until incorporated.
- Fold the egg whites and egg yolk mixture together.
- Pour into waffle maker and cook according to waffle maker instructions.
- Serve with blueberry syrup
Blueberry Syrup
Ingredients:
- 1 cup blueberries
- 3 Tablespoons of sweetener
- 1 teaspoon Xanthum gum thickener (I ordered mine from Amazon, if you don’t have any you can add 1 Tablespoon of corn starch or just omit this step, it will just be a little runny.
Instructions:
Place the blueberries, sweetener and thickener in a sauce pan and bring to a boil. Serve hot
