One day my husband was frying a few shrimp in coconut oil and I was thinking how coconut-y and delicious it smelled and it made me think how good Shrimp would be dredged in coconut flour and shredded coconut. So I got busy looking for a recipe and came up with this one.
We made it for the first time on this Saturday night and it was a winner! This recipe would please Keto dieters or just your regular person eating whatever they wanted to! I like how crispy and golden the shrimp get and the spicy sweet dipping sauce.
Give this recipe a try, it is sure to rise to the top of your weekly Keto Menu rotation and it makes for a great appetizer or snack.
Keto Coconut Fried Shrimp with Spicy Sweet dipping sauce
Ingredients:
- 1 pound of large raw shrimp, remove the shell
- 6 tablespoons coconut oil
- 2 eggs
- 1/2 cup of coconut flour (regular wheat flour can be used if you are not on the Keto diet)
- 1/2 cup of shredded unsweetened coconut
- 1/4 teaspoon salt
- 4 Tablespoons mayo
- 2 Tablespoons Xylitol (regular sugar if you are not in Keto)
- 1 Tablespoon Sriracha (a popular Asian hot sauce available in America, you can use any hot sauce or red puréed chili’s )
Instructions
- After removing the shell, make two small cuts on the underside of the shrimp, then insert a toothpick into the shrimp lengthwise. This is to keep the shrimp straight rather than curling up, you can skip this part if it doesn’t matter to you. Prepare all of the shrimp this way
- Prepare three small bowls, one with the beaten eggs, one with the coconut flour and salt and one with the shredded coconut.
- Heat the oil to medium high
- In assembly line fashion, Dip each shrimp into the flour, then the egg then the shredded coconut and then fry until golden brown on all sides.
- To make the dipping sauce combine the Xylitol or sugar, mayonnaise and Sriracha together, I use a mortar and pestle to grind the Xylitol finely so that it dissolves quickly. You can also use the back of a spoon on a plate to grind the sugar fine or try it with the courser sugar. Given enough time it should dissolve.
- Serve with a wedge of lime and enjoy!
