This recipe is for those of us that may not have easy access to Indian Paneer, the cheese of India. But fortunately for us, Feta provides an excellent substitution. In fact, some say they like it more than Paneer! Either way, I think you and your family or friends will love this Indian menu, just put in your favorite Bollywood movie and soak up the flavors, sites and sounds of India at home.

Ingredients:

  • 2 Tablespoons olive oil
  • 1 onion
  • 3 garlic cloves (1 1/2 tablespoons minced)
  • 1 Tablespoon minced ginger (about 1 inch section)
  • 1 1/2 teaspoons cumin, gram marsala, red chili powder, salt, tumeric and coriander
  • 16 ounces Spinach (about 10 cups of fresh) or use frozen
  • 1/2 cup plain yogurt
  • 2 ounces feta cheese

Instructions:

  • Precook Spinach in one inch water, boil until the spinach has cooked throughout, about 10 minutes. Allow to cool, discard cooking water and rough chop the Spinach if it was not already chopped.
  • heat oil in a large skillet
  • add onions and cook until translucent
  • add ginger and garlic and cook until fragrant
  • add additional spices and cook for a few more minutes
  • add cooked spinach and cook through
  • add yogurt and continue to cook until combined and bubbly
  • chop or crumble feta and stir to combine
  • serve

Add the feta and the Saag is ready!
