  15. I came to see what I needed for the Cherry pie recipe and found this very interesting information on coffee. You guys have told me before about
    these advantages but having it on this forum with pictures is really helpful. You’re right, I do see bread machines at a lot of garage sales and thrift stores. Your coffee that you described is great. I remember the batch you gave me. The resourcefulness you two showed to be able to roast your own coffee reminded me of the things my dad and I did to get things done around the dairy. Thanks and I want to give it a try.

      1. Keyonna, the basic cake batter cookie dough recipe is under the cherry cheesacake ice cream recipe but instead of the cherries and cheesecake you mix in chopped up frozen cookie dough. Enjoy!!

  19. It’s nice to have the two of you close by. Jeff has fixed my sprinkler system which was very old and not working.I had to drag the hose around and was worried I would fall. Thanks Jeff! Also Jeff and Katrina laid a patio and stained my new fence. Hopefully all the projects are done and we can enjoy the backyard all summer long. Mom

The instructions you give are really great and I appreciate how really listen and and respond to the feedback you get on your blog. The flour does work a lot better than cooklng oil!   31. Delicious! I typically use coconut oil when I make popcorn as it has a nice high flashpoint.

    1. Yes, probably a much better option, I default to olive oil on everything but I’m sure coconut oil much better!

  34. I love bone broth! I don’t know if you have slow cookers in Italy, but I make my bone broth in a Crock-Pot for 24-48 hours. (24 for chicken and 24-48 for beef) Roasting beforehand definitely adds more depth of flavors and makes a more delicious broth. The slow cooker allows me to start it and walk away from the house while cooking. It’s low heat, so it does take time. Enjoy your beef bone broth!

  35. I am totally making this! I have a two questions, though. I love your little ravioli cutter. Where can I find one like it? Second question: What do you do with your excess pasta that you’ve cut out? Do you trash it? Oh wait. One more question: Pumpkin risotto?! Will there be a recipe for that on your site in the future?

    1. Hi Victoria! You will love it! Be sure to freeze some so you can have quick and easy meals later! I got my ravioli cutter at the local street market here in a Italy but I googled it and you can get them at Amazon if you type in “round ravioli cutter” The answer to your second wuestion is “eat it!” of course! Boil it up with the ravioli or save it for the next night, you can add any sauce to it. Yum!

  37. The artichokes look delicious but what I really enjoyed was your story. The part where you nearly fell off the curb because the sidewalk ended while you were craning your neck looking at the lovely artichokes on people’s plates at the restaurant gave me a good chuckle. I saw you in my minds eye doing this and it was very humorous.

  38. Hey Katrina! This looks yummy. I’m really interested in that tomato/onion soup base. One question, though. Do I use one of the three onions to stew with the chicken and the other two for the soup base or do I need four onions total?

    1. All three go in the tomato soup base. The only other onions are the green onions on top. Enjoy!!!

    2. I adjusted the recipe to make it more clear, let me know if it is better or if I made it more confusing!

  41. I’ve never really been much of a pumpkin pie eater but after reading your recipe for the cheesecake pumpkin pie and the nut and flax seed crust, ooiiiee…I was won over. When you chastised yourself for saying, “ticked all the right boxes” that that’s not how Americans say it, I was a bit confused as I hear, “ ticked all the right boxes” quite often. It was then that I realized I watch a lot of BBC tv shows! Lol and that’s why it sounded right to me. How funny.LOL

  54. This made me laugh! But I kind of understand because when we moved to Martinez I looked at the refinery in horror because it was the most hideous thing I ever saw. But after a while I didn’t even notice it anymore! Here in California though they would be cutting down all weeds because of the fire danger! I do wish you had included a photo of the weeds so we could have seen how awful they are! Lol. I’ll look for a picture on the internet.

Oh my gosh, does it have leopard print plush seat covers? I’m going to die. I’m really not happy about this. “Just get in” Jeff says as I stare at the jallopy with my mouth gapping open and my eyes large with disbelief. I get in. I’m really upset about this. Why, oh why, did I not allow our Airbnb person to pick us up? They would have had a nice sign with our name on it as we walked out of the airplane … and a nice car, the owner of the bnb is from Italy for crying out loud! Oh, how nice Italy sounds right now. Why did I ever leave my little villa?

  58. I do love a good beef pot pie! Yours is a beautiful brown color. Can you explain to me a bit more, please, about using the ends and papers of the onion to get good color? At which step do you cook them? At which step do you remove them from the dish?

    1. Hi Victoria, you just place the onion papers and ends in a separate pot of water, like you are making broth. You can also throw in the carrot and potato peelings and add a beef boullion cube to about 2-3 cups of water? Bring to a boil and cook for 30 minutes while you are preparing everything else. Then strain the broth and throw away the peelings. Use the broth as instructed in the recipe. You can do this anytime you have onion peels and then freeze the broth for use later as a “do ahead” tip. I will review my original recipe and try to make it clearer. Let me know how it turns out!

  59. I made it! And it was incredible! I subbed venison and baby portobellos for beef and white mushrooms, but other than that, no changes. That gravy made with onion skin and beef stock and wine was decadent! Thanks for the recipe, lady!

  62. I made this yesterday and baked it this morning. I didn’t have a clay pot so I used a deep cast iron skillet that is for frying chicken that has a lid. I made the dough at 11:00 am and kept it out for about 6 hours then I refrigerated it over night. This morning I took it out of the fridge and when it was room temperature I transferred it to the heated skillet as directed. It came out so good! The crunchy crust is amazing! Thank you for sharing this easy and delicious bread recipe! I would include a picture if I knew how.😁

    1. Actually a friend of mine said she made them gluten and sugar free, but I don’t know what flour she used….

  64. Hi Katrina. I recently came across your beautiful blog, and specifically the articles about Itri. The photography is terrific. I have a set of long-lost grandparents (long story) that we recently discovered were from Itri – surnames Mancini and DeFabritus. Before all of the recent COVID craziness, we were planning on a trip to Itri, and hope to get back to this in the fall.

    1. Hi John, I’m glad you found my blog! We love living in Itri, it’s such a small beautiful town. The area is stunning with beaches and little towns with castles! What a wonderful heritage you have here. The name Mancini is very well known, they are a very large and successful olive producer and they export olives and olive oil all over Italy and the world. They also have the olive crusher in town so we all must go to them to get our olives crushed for oil. They own many businesses here so you come from a very successful family! I hope you are able to visit soon!

      1. Can’t wait to come. So funny that the Mancini name is so well known and successful in Itri. Our family has been so blessed on this wide of the Atlantic, but recently found out (we had no idea we even HAD Itri grandparents or relatives all of our lives) that all of this was some sort of miracle because our first gen Itri grandparents met with so much tragedy (more than you would ever want to know here — https://www.searchformygrandparents.com/.) It’s been such a joy to learn about Itri – keep publishing, and I will be making some real Italian ragu from your recipe whilst in hibernation here.

  66. That’s how I make what I thought was Bolognese. However, the American recipe has you put the milk in and let it reduce before adding the wine to reduce and then add the tomatoes. It’s delicious, but it definitely has all the American herbs plus more! 😂

  69. I love this post. Even as a history major the period of Italian history before unification is enormously confusing. Two good books… About Italy in WW1, A Farewell to Arms, about the Isonzo Front (my grandfather’s unit built the trenches and fortifications) and the disastrous last and 12th Isonzo battle at Capareto. For WW2, I love Beneath a Scarlet Sky, centered in Milan and based on a real guy, who at last check is still alive. One of those “all this can’t possibly happen in one lifetime” stories.

  71. What a delightful way my husband and I spent, during “quarantine” taking this online cooking class with Katrina and Jeff! Katrina provided clear instructions of the equipment and ingredients we would need, to prepare our Gnocchi alla Sorrentino.
    It was such a fun couples thing to do, after being married for 38 years, it’s nice to try doing new things together! I highly recommend these culinary classes with our “Homestead Travele”! It makes for an inexpensive way to enjoy a delicious meal, good association, and to see a live sunset in Italy, it has all the makings for a fun date with your honey, or with a group of your friends, through Zoom.
    It was a pleasure meeting other friends from around the country too. We plan on scheduling another class very soon. It’s worth every penny! (Euro)😘🇮🇹🍽🍷

Recall hanging on to my hoop earrings while riding the wood roller coaster, loved the carousel and attending a wedding reception at the Coconut Grove and many wonderful dinners at the Crow’s Nest just south of Santa Cruz.
