Fluffy American Pancakes

It’s August and we were supposed to be going home to California for a month to see family and friends and take care of Business. But the Pandemic had other plans for us, just as it did for many of you who were planning trips and vacations that now are canceled

So instead I am teaching a solid month of Online Cooking Classes! I’m very happy for the distraction and the ability to get to know so many people from all over! It’s a nice way to stay connected and social in this quarantine situation that we all find ourselves in,

But what does one do when they can’t go home to America? They bring America to Italy! In the form of Blueberry Pancakes! Such a comfort to get a little taste of home while on foreign soil.

I love this recipe because it does not call for buttermilk, which does not exist in Italy. Rather, you “sour” your milk by adding vinegar. The affect is instantaneous and you can actually watch your milk thicken! These pancakes turn out so fluffy and wonderful and we have our stash of maple syrup ready to go! We even discovered in the deli here that “Pancetta Affiumicato” is American Bacon! Affiumicato means “smoked” and let me tell you, this bacon is dynamite!

So the same principle applies to you, if you can’t get to Italy this year, just cook some homemade pasta, turn on Andrea Bocelli and have an Italian stay-vacation at home.

I also learned from this “photo shoot” of my pancakes that eating a stack of pancakes is WAY better than eating one flat pancake at a time. Wow! Just dive right in there to that massive stack of pancakes!

Fluffy American Pancakes

Ingredients:

  • 3/4 cup milk
  • 2 Tablespoons white vinegar
  • 1 cup flour
  • 2 Tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 2 Tablespoons melted butter

Instructions:

  • Combine milk and vinegar together
  • Mix together all dry ingredients
  • Add “soured” milk, egg and melted butter
  • whisk together
  • Allow the skillet to get very hot and add a little butter or cooking spray
  • pour enough pancake batter to make the size pancakes you desire
  • If you want to add blueberries or chocolate chips you can drop a few on the pancake on the skillet
  • Once the pancake forms air bubbles, flip it over
  • serve warm with syrup and butter
