So I am back home in California after living in Italy for a year and a half. We will only be home for three months, working and visiting with friends and family before we return to Italy again. As a side point I am enjoying such novelties as a good heater in my house, a powerful shower head in a roomy bathroom and a dryer to dry my clothes!
I am also newly exposed to copious amounts of fast food and easily accessible sugary and fat filled delights! I dove headfirst last night into a red velvet cake that I thoroughly enjoyed but later regretted.
Jeff on the other hand has been resolute with his “Keto” diet, resisting donuts, cake, cookies, chips, dips and “carb laden” side dishes presented by our friends and family. As a reward of his diligence in the face of adversity, I have stepped up the Keto recipes for him.
First up, a man has to be armed with some dessert options. So I whipped up a batch of these Peanut butter “Keto” Balls, especially fun since we newly have access to as much peanut butter as we could ask for! Personally, I would have melted some chocolate and dipped those little balls but Jeff requested they be rolled in cocoa (the true “Keto” guy that he is).
Give these little yummy balls a try and keep an arsenal in your freezer so you can retreat at any time to the safety of the “No-Carb Keto World” when you are faced with the temptation of a red velvet cake or a package of Oreo’s or some other decadent temptation.
Easy Peanut Butter “Keto” Balls
(Also good for diabetics, gluten-free, vegetarian or Banting Diet)
Ingredients:
4 ounces cream cheese (1/2 cup) or 115 g
2 ounces peanut butter (1/4 cup)
1 oz (2 tablespoons) keto friendly sweetner, I used Monk fruit
crushed chocolate chips, nuts or cocoa powder for rolling in
Instructions:
- Dump all the ingredients together and blend, I used an electric mixter.
- Form into bite size balls, I lightly rolled mine in my hands after I rubbed a little butter on my hands.
- Then roll in the chopped chocolate, nuts or cocoa. You can freeze the balls first if you find them sticky to work with. I didn’t and it worked fine but I had to work gently.
- Freeze to firm up the balls before placing them in a container for storage in the freezer or serve immediately!
