Our biggest complaint used to be “I never have enough time”. Now, during this global pandemic, we all have nothing but time and absolutely no where to go, while in quarantine. It’s time to do all of the things we always wanted to do, things we always wanted to master but didn’t have the time.

Beef Pot Pie
It’s time for the hearty meals of Winter! Slow cooked, rich, beef pot pie is so comforting on a cool night after a long day. I have always loved a beef pot roast, pot pie, beef stew or even the fancy Beef Bourguignon, they are all twists on the classic slow braised beef. Beef Pot Pie simply adds a pastry crust to the already delicious stew.

I am sorry for all of the other cakes in the world, but German Chocolate Cake is my favorite. It has been for a long time. I love the creamy carmel taste of the frosting with coconut and nuts. I think it is supposed to be with pecans but I always make it with walnuts.

It was a sunny April day and we dined poolside. I ordered the Lemon Ricotta pancakes and was delighted when my tall stack of fluffy ricotta pancakes were delivered to the table with their delightful berry topping.
