Apple Strudel

This is a recipe that came as a direct result of the 2020 Quarantine. We found ourselves at home without hope of eating the “Cornetto” and Cappuccino that we had become so accustomed to on Saturday morning. So on our Anniversary morning I was thinking what I could make for Jeff that was special.

I was deciding between Crepes, Lemon Ricotta Pancakes or Apple Studel. Honestly, the first two choices were more about what I would like as a “Special Breakfast” but when I thought of my husband and what he would really enjoy, I knew it was the Apple Strudel. He will always pick an Apple Cinnamon choice. And yes, it was a hit, he was so happy with his Apple Studel!

I really enjoyed it too, and now it has become our “Saturday Morning” treat, replacing the delightful Cornetto that we would enjoy at the local cafe in our small town of Itri.

In Italy we can buy Puff Pastry in the grocery store refrigerated section, it’s really cheap and so easy to use! I keep some in my freezer for when you want a tasty Italian breakfast or a savory flaky appetizer.

So this recipe is super easy, just unroll the package of Puff Pastry and cook up your apples filling your house with the welcoming cinnamon aroma. Soon you will be enjoying an Apple Strudel that is even better than the Pastry at the local bakery. Enjoy it outside on a Summer morning in the sunshine and you won’t even remember that you are in Quarantine.

Apple Strudel

Ingredients

  • 1 Package Puff Pastry
  • 1 large apple
  • 1/2 cup water
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
  • 1 Tablespoon flour

Instructions

  • preheat oven to 350
  • Chop Apple into small cubes
  • Put water to saucepan over medium heat and add the chopped apples
  • stir the dry ingredients together in a small bowl and add to the chopped apples and water
  • cook for 5 minutes, stirring occasionally
  • allow to cool
  • Spoon Apple mixture into the center section of the puff pastry and fold the puff pastry over the apples like a letter
  • Slice slits into the top of the strudel
  • sprinkle cinnamon sugar on top (2 Tablespoons sugar, 1/2 teaspoon cinnamon)
  • Bake for 10 minutes
