Sometimes in Italy I take a break from a italian food and enjoy another ethnic food like Asian! But often I cannot find all of the ingredients, in that case I make my own! That was the case with this Sweet Thai Chili Sauce, in Thailand its called nam chim kai. It is used as a dipping sauce, a marinade and for stir-fry’s.
I made up a batch because I was craving wontons and spring rolls dipped into its sweet spicy perfection. But while I was laboring over the wontons, my husband comes into the kitchen with a bag of rice crisps (rice chips that are readily found here in Italy) and he dipped into my cream cheese and the Sweet Chili Sauce and a new snack was born!
I wrote the ingredients in Italian for my friend Anna here in Italy who requested the recipe, the highest compliment indeed!
Thai Sweet Chili Sauce
Ingredients:
- 1 1/2 cups water (375 ml Acqua)
- 1/2 cup white vinegar (125 acido)
- 1 cup of sugar (200 gram Zucchero)
- 1 Tablespoon corn starch (7.5 gram amido di mais)
- 1 Tablespoon ginger (7.5 gram zenzero) Peeled and minced
- 1 Garlic clove, finely chopped (Aglio)
- 1 Tablespoon Sriracha (Asian hot sauce, if you don’t have it try ketchup or tomato sauce (7 gram Passata)
- 1 teaspoon dried red hot chili flakes (peperoncino)
Instructions:
Add all ingredients together in a saucepan and bring to a boil, stirring occasionally. Once it comes to a boil, remove it from the heat and cool. Store it in the refrigerator.
