The Autumn days of October when the air is crisp, the trees are changing colors and the weather is unpredictable. Today we had some rain in Italy and what better way to welcome Autumn and cozy up in the house than to cook up some hearty soup. Farro is quite popular in Italy and is grown in the Northern regions such Umbria and Tuscany and mine, the Lazio Region.
Pumpkin Ravioli with Sage Butter
Autumn is gently rolling in and the late summer harvest of Pumpkins has arrived. I love when I start to see the pumpkins with their large spheres and pale pink skins start to show up at the farmers market. The pumpkins here are different than our American version that are orange skinned. The pumpkins in Italy have pale skin and dark orange interiors. They call them ‘zucca” and this is my favorite variety.
Fudge Brownies (using cocoa powder) Keto adaptable!
Fudge Brownies are as much of a hit in Italy as they are in America. Who can resist that moist, deep chocolate flavor? I love this recipe because you just dump all of the ingredients into a bowl and mix it up. It’s easier than using a brownie box mix! Some things in life are just delicious and easy! This recipe is another treasure from that little blue vinyl cook book I copied years ago from my mother.
Oven Roasted Herb Chicken and Potatoes (Arrostito Pollo al Forno con Patate) with “Keto” version
What could be more homey than a chicken roasting in the oven with the smell of rosemary and thyme wafting through the air? The promise of a hearty meal soon to be set at the table. In our modern era of convenience foods the smells of a slow cooked meal are almost extinct. But this smell conveys the feeling of family and love and contributes to the families feeling of well being.
Pear Gorgonzola Salad with grapes and walnuts
Seasons are changing and here in Italy fall is in the air. The mornings have that cool crisp feeling and we are starting our day a little later as even the sun wants to stay in bed longer. This slight change is bridging that gap between two seasons: the waning of Summer and the start of Autumn.
The Classic American Hamburger (with “keto” or “protein” style options AND Vegetarian and Gluten Free options)
Oh, the Classic American Hamburger, so good in all of its simplicity. Or delicious in its complication when an egg is added or aioli or brie and cranberries, my goodness, how we have grown from our simple roots.
Beef Bone Broth (Keto friendly)
Its Monday, and for us that means a “fasting” day, so we made up a batch of Beef Bone Broth to help sustain us. On my blog and Instagram people always comment on my photos of delicious food and say “How can you eat like this and not get fat!?”
Eggs Benedict with Hollandaise Sauce
Its Sunday morning and the perfect time to catch up from the hectic week and enjoy some down time. What better way than a slow and easy breakfast with friends or family? Ahhh, a lazy Sunday morning with a lingering cup of coffee and soft poached eggs under a blanket of velvety, decedent Hollandaise Sauce. It is a sign of true love and friendship when you get up early and prepare this beautiful breakfast to the delight of your loved ones.
Genovese Pesto
Its the end of summer and those of us who planted those adorable little basil plants in early summer with dreams of fresh pesto and bruschetta now have basil plants the size of trees spilling out of our Italian balconies. But have no fear, a sizable batch of pesto will soon cut those basil trees back down to size.
Shrimp Tacos (Keto Adaptable)
Shrimp Tacos originate from California, Baja California that is, and they are definitely my “go-to” dish. I first had them years ago at a restaurant in California and quickly went home and came up with my own version. They are fast and easy to make and I usually have the ingredients on hand.
