Summer desserts are all about being cool, refreshing and light. This lemon Tiramisu is light and airy with just the right amount of lemon and sweet. Don’t let the name distract you, this Tiramisu has no coffee or cocoa in it. But it is created in the exact same recipe and style as a true Tiramisu. If you don’t want to distract your guests you may try just calling it a lemon cake or Torta di Limone.

I have had a love affair with Gyoza for many years. I first tasted them in Modesto, California. I loved the perfect little Chinese dumpling spiked with ginger and steamed, then fried crispy on one side. In the Chinese restaurant they served them with red chili oil and vinegar along with soy sauce.
Eggplant Parmesan (Melanzane Parmigiana) with Keto version
Eggplant Parmesan or Melanzane alla Parmigiana as they say in Italy is claimed to be from the Southern regions of Italy both Campania and Sicily claim it as their. It Is usually served as a Primi Piatti or first course in Italian Cuisine.
Kung Pao Chicken (with Keto Version)
Kung Pao Chicken is the perfect mid week meal, it’s fast and delicious and full of nutritious veggies! I have been making this meal for years but we are particularly interested in this dish this week for its “Keto” value. Yes, I can’t believe we are on the “Keto” band wagon, but since we have been practicing Intermittent fasting for a while now, we are adding some Ketogenic meals into the mix.

So I have finally mastered the Risotto and have been enjoying its creamy decadent wonder every week now. Amazing flavors like Pumpkin Risotto, Milanese Risotto, Mushroom Risotto, Radicchio Risotto and Shrimp Risotto. There is the rare occasion when all the risotto does not get eaten up and the bowl licked clean and you find yourself with leftover risotto in the fridge.

Whenever I have company that spends the night and I want to make a special breakfast that is not too labor intensive, I turn to Dutch Baby Pancakes. With summer coming to Italy we are starting to have more house guests, so I’ve been whipping them up lately! Dutch Babies are an American invention by Manca’s Cafe in Seattle.
Pasta Carbonara
Carbonara was a dish that alluded me before I moved to Italy. It flies contrary to the cooking style of Americans. We view all sauces as containing cream or tomato sauce but this is not true of Italian pasta. The sauce is usually very simple, so simple we can’t imagine it to be correct.
Steamed Mussels and Fettuccine (Cozze e Fettuccine)
We live in Nettuno, a beach town one hour south of Rome. The only thing Italians love as much as sun tanning on the beach is sauntering up from their sun beds into the Borgo for a steaming plate of mussels and pasta.
