Oh the memories I have of my dad standing as guardian over the smoking barbecue, I can still see him in my minds eye in his cut off denim shorts and a Coors beer tank top. He had a fly swatter in one hand and a water squirt bottle in the other to calm the igniting flames.
I’m not painting a very elegant picture here but it’s as sweet as they come in my book. He could make a mean barbecue chicken. Memories like this may be mundane as they are happening, just another summer day in the hot California sun, under the massive cherry tree, but they grow sweeter with the passing of time…and the passing of our loved ones.
Oh boy, I’m waxing poetic here, but this BBQ Chicken will always take me back to my childhood and fond memories of family. Enjoy those mundane summer evening while you can, fly swatter, cut off jeans and all. These are the moments that happened without noticing, nothing special but like little stitches in a garment, they made up your childhood. Cherish them because soon they will be gone in a blink of an eye.
Dads BBQ Lemon Chicken
Ingredients:
- 1 whole chicken cut up into pieces
- 1/3 cup of butter
- 1 lemon, juiced and then it’s pealing sliced thinly, while still whole (in rings)
- 1 onion, chopped
- 1 Clove of garlic, minced
- 1 Teaspoon mustard
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/2 cup of water
Instructions:
- Get your grill ready, start grilling the chicken, it should take about 45 minutes since the meet is on the bone
- In a saucepan melt the butter, add the chopped onion and sauté for a few minutes
- Add the garlic and sauté until fragrant
- Add the sliced lemon peel
- Add the spices, lemon juice and water
- Cook until incorporated and reduced 5-10 minutes
- place the lemon rings on the grill so they get nice and browned
- using a spoon or brush coat the chicken and allow to heat through
